Basic Lemon Chicken 09/29/2010
This is one of my favorite chinese fast food. Partner it with a lot of plain rice and I'm good to go. I found this recipe online here. I just did a bit of tweaking with the lemon glaze / sauce since I like it sweeter. You can take off the chicken skin if you want it healthier (although this is fried food and the skin does keep the chicken juicier and tastier). The bigger SuperMarkets sell these with the bone off. It will save you time if you buy those but make sure you get only the freshest cuts. ![]() Ingredients : Chicken 1/2 kg chicken breast / thigh 2 tbsp soy sauce 1/2 tsp ground white pepper Procedure : 1. Remove bones from breast / thigh and chop into 1 1/2 cubes 2. Add soy sauce and white pepper to chicken cubes (you may add your own spices here) 3. Let marinate for 30 minutes to an hour. ![]() Lemon Sauce / Glaze 1 pc medium sized lemon 6 tbsp sugar 2 tbsp corn starch 1/4 tsp salt 1 tbsp oil 1 cup water Procedure : 1. Finely grate Lemon skin, use the yellow part only; move to another spot once the pith is exposed. 2. Extract lemon juice, add the grated peel and mix thoroughly with other ingredients. 3. Simmer in a pan on low heat while continuously stirring until desired consistency is reached. 4. Set aside. ![]() Batter: 4 tbsp cornstarch 2 pcs egg 1/4 tsp baking powder Procedure: 1. Mix all ingredient thoroughly until cornstarch is completely dissolved. 2. Add water to adjust consistency. 3. Add marinated chicken into batter. ![]() Preparation: 1. Fry battered chicken in a wok or deep fryer on high heat for 1 to 2 minutes. Do not over fry as chicken will dry out quickly. 2. Set aside and let the excess oil drain. 3. Pour Lemon sauce / glaze and garnish with lemon slices. I hope you enjoyed this recipe. I did two batches; on the first batch I got the chicken right, all crunchy and juicy inside ; on my second attempt I got the sauce right.
